Bzz! Bzz! Y’all hear that? The queen bee is here and she came bearing gifts- it’s the honeycomb cake! This cake takes its name from its beehive-like interior, full of little air pockets, with honeycomb tunnels going from the bottom up. Doesn’t it make you feel like a little bee in a beehive when looking at it? Fun fact, this honeycomb cake has a few siblings! The indonesian Bika Ambon and the Vietnamese Honeycomb Cake are all quite similar, but our Malaysian recipe calls for the sugar to be caramelized first, which makes it a darker colour than the others!

Ingredients:

1 tsp Baking Soda

1 cup Flour

1 tsp Vanilla Essence

½ cup Condensed Milk

1 cup Granulated Sugar

1 cup Hot Water

½ cup Butter

4 Eggs

 

Steps:

  1. Heat sugar until caramelized and add hot water and stir well. Remove from heat. add the butter and set aside to cool.
  2. In another bowl, lightly mix the eggs, condensed milk and vanilla essence together. Sift flour and baking soda in batches and mix well.
  3. Pour the caramel butter sauce into the batter and mix well. Let it sit for 1 hour.
  4. Bake at 180 degree celcius for 45 – 50 minutes.
